Instructions
Step 1: Prepare the Aloo Tikki Mixture
Mash the boiled potatoes while they are still warm until smooth, ensuring there are no large lumps. Add the cornflour (or rice flour), finely chopped green chillies, grated ginger, red chilli powder, roasted cumin powder, chaat masala and salt. Mix everything well until the mixture is smooth, firm and easy to shape. If it feels too soft, add a little more cornflour, one teaspoon at a time.
Step 2: Shape the Aloo Tikkis
Divide the potato mixture into 8 equal portions and shape each portion into a thick, round Aloo Tikki, about 1.25 cm (½ inch) thick. Slightly thicker tikkis remain soft and fluffy inside while developing a beautifully crisp outer layer during cooking.
Step 3: Shallow Fry the Aloo Tikkis
Heat oil on a non-stick or well-seasoned cast-iron tawa over medium heat. Arrange the Aloo Tikkis without overcrowding the pan. Cook for 3–4 minutes on each side, turning gently with a spatula, until both sides are evenly golden brown and crisp. Avoid cooking over high heat, as the tikkis may brown too quickly on the outside while remaining undercooked inside.
Step 4: Assemble the Homemade Street Style Aloo Tikki Chaat
Place two hot Aloo Tikkis on each serving plate. Gently press the centre of each tikki to create a shallow depression. Madhu Savara’s Tips for the Best Aloo Tikki Chaat
Always use floury potatoes for Aloo Tikki Chaat. They mash easily, bind well, and give you crisp tikkis with a soft, melt-in-the-mouth centre.
Do not over-boil the potatoes. Excess moisture makes the Aloo Tikki Chaat mixture sticky and difficult to shape. If required, refrigerate the boiled potatoes for 30 minutes before mashing.
Mash the potatoes while they are still warm so that the mixture becomes smooth and lump-free.
Add a little cornflour or rice flour only if the potato mixture feels soft. This helps the Aloo Tikki Chaat stay crisp even after adding curd and chutneys.
Shape all the tikkis to the same thickness so that every Aloo Tikki cooks evenly and turns beautifully golden.
Shallow-fry the Aloo Tikki on medium flame. Cooking on high flame browns the outside quickly but leaves the inside soft and uncooked.
Do not overcrowd the pan. Fry the Aloo Tikki in batches to maintain the oil temperature and achieve an even golden crust.
