Authentic Assamese Jolpan Recipe | Traditional Doi Chira Breakfast

This authentic Assamese jolpan recipe is a simple preparation of softened chira served with fresh curd and jaggery. Known as doi chira, it is one of the uncomplicated ways in which flattened rice is enjoyed as part of a traditional Assamese breakfast.
The chira is softened briefly in water and drained before being combined with curd and grated jaggery. The result is soft and creamy, with a gentle sweetness from the jaggery and a slight tang from the curd.

  • cups thick chira flattened rice
  • 1 cup fresh curd preferably with a slight natural tang
  • 3 tablespoons grated jaggery or to taste
  • Optional: 1 tablespoon fresh cream

  • Prepare the Chira
  • Place the thick chira in a bowl. Pour in enough water to wet and cover the flakes. Leave it for about 5–7 minutes, or only until the chira becomes soft.
  • The exact soaking time can vary according to the thickness of the chira, so check the texture rather than relying only on the clock.
  • Drain the Chira
  • Transfer the softened chira to a strainer and drain the water completely. Allow the excess water to run off naturally. If required, press very gently, taking care not to mash the softened flakes.
  • Add the Curd
  • Transfer the drained chira back to the mixing bowl. Add the fresh curd and fold it gently through the chira until evenly distributed.
  • The curd should coat the chira without making the mixture excessively watery.
  • Add the Jaggery
  • Add the grated jaggery according to your preferred level of sweetness. Mix gently so that small pieces of jaggery are distributed throughout the doi chira.
  • If your jaggery has large or hard pieces, grate or crush it finely before adding it.
  • Finish and Serve
  • For a slightly richer texture, add a tablespoon of fresh cream if desired and mix gently.
  • Serve the doi chira jolpan immediately after preparing it. It tastes best when the chira is soft but still retains its texture, and the curd is fresh.

Notes

Tips and Variations

Use thick chira whenever possible, as it holds its texture better after soaking and does not become mushy as quickly as very thin flattened rice.
The curd should be fresh and thick. A slight natural tang works particularly well with the sweetness of jaggery, but curd that has become excessively sour can overpower the simple flavour of the dish.
Adjust the jaggery according to taste rather than making the jolpan overly sweet. Finely grated jaggery mixes more evenly with the curd and softened chira.
For a richer bowl, add a spoonful of fresh cream. This is optional and can be left out when you prefer a lighter preparation.
For a different texture, muri (puffed rice) may also be served with curd and jaggery. However, muri gives a much lighter and crunchier result and should not be soaked like chira.
