Ingredients
For the Fermented Dough
2cupswhole wheat flouratta
1cuprefined flourmaida (optional, for a softer texture)
1teaspoonactive dry yeast
1teaspoonsugar

¾–1 cup lukewarm wateror as required
For the Traditional Walnut & Poppy Seed Filling
½cupwalnutslightly roasted and coarsely crushed
3tablespoonspoppy seedskhus khus, soaked for 30 minutes and drained

Instructions
Step 1: Activate the Yeast
Combine the yeast, sugar and ¼ cup lukewarm water in a small bowl. Stir gently and leave for 8–10 minutes until the mixture turns frothy and bubbly. If the yeast does not foam, discard it and use a fresh batch.
Step 2: Prepare the Dough
In a large mixing bowl, combine the whole wheat flour, refined flour (if using) and salt. Rub in the desi ghee, then add the activated yeast mixture. Gradually pour in the remaining lukewarm water and knead into a soft, smooth dough. Knead for 6–8 minutes, lightly grease the surface with ghee, cover with a damp kitchen towel and allow it to proof in a warm place for 1½–2 hours, or until doubled in size.
Step 3: Prepare the Traditional Filling
In a bowl, combine the roasted and coarsely crushed walnuts, soaked poppy seeds, onion (if using), green chillies, ginger, garlic (if using), coriander leaves, lightly crushed cumin and fennel seeds, black pepper and salt. Mix well until evenly combined and adjust the seasoning to taste.
Step 4: Shape the Siddu
Gently deflate the risen dough and divide it into 6–8 equal portions. Flatten each portion into a thick disc using your hands or a rolling pin. Place 1½–2 tablespoons of the walnut and poppy seed filling in the centre, bring the edges together and seal them firmly. Shape into smooth round or oval buns.
Step 5: Steam the Siddu
Lightly grease the steamer tray with desi ghee and arrange the shaped Himachali Siddu with enough space between them. Steam over medium heat for 18–25 minutes, depending on their size. The buns are ready when they are well puffed, firm to the touch and a toothpick inserted into the centre comes out clean.
Step 6: Serve Hot
Brush each Authentic Himachali Siddu generously with warm desi ghee immediately after steaming. Serve hot with green chutney, Himachali dal, madra, or any traditional accompaniment from Kullu Dham for an authentic Himalayan meal.

Use a flour blend for softer Siddu: Combine equal parts whole wheat flour (atta) and refined flour (maida) for a lighter, softer texture. For a healthier version, use only whole wheat flour.
Choose a traditional filling: The classic Authentic Himachali Siddu Recipe uses a walnut and poppy seed filling, while some households prepare sweet Siddu with jaggery or a savoury urad dal filling.
Proof the dough in a warm place: During winter, keep the dough near a warm stove or inside an oven with the light switched on to ensure proper fermentation.
Seal the dough well: Pinch the edges firmly after filling to prevent the stuffing from leaking during steaming.
Steam over medium heat: Avoid high heat, as it may cook the outside quickly while leaving the centre undercooked.
