Ingredients

  • Black pepper – ½ tsp
  • Oil – for deep frying
  • For the Bang Bang Sauce:
  • Mayonnaise – ½ cup
  • Sweet chilli sauce – ¼ cup
  • Sriracha – 1 tbsp adjust to spice level
  • Honey – 1 tbsp
  • Lime juice – ½ tsp
  • Garnish:
  • Chopped spring onions
  • Sesame seeds

Instructions

  • Step 1: Marinate the Chicken
  • In a bowl, mix chicken pieces with buttermilk, salt, and pepper. Cover and let them soak for at least 30 minutes. This ensures juicy tenderness.
  • Step 2: Prepare the Coating
  • In another bowl, combine flour, cornstarch, garlic powder, and paprika. Dredge each marinated chicken piece thoroughly to get a crisp, even coating.
  • Step 3: Heat the Oil
  • Heat oil in a deep pan until it reaches 350°F (175°C). Test with a small piece of flour — if it sizzles, it’s ready.
  • Step 4: Fry the Chicken
  • Fry chicken in small batches for 4–5 minutes per batch until golden brown. Do not overcrowd. Drain on paper towels.
  • Step 5: Make the Bang Bang Sauce
  • In a bowl, whisk together mayonnaise, sweet chilli sauce, honey, lime juice, and Sriracha. Adjust sweetness or spice to taste.
  • Step 6: Toss and Serve
  • Gently toss the crispy chicken bites in the creamy Bang Bang sauce until evenly coated. Garnish with spring onions and sesame seeds. Serve hot.
