Ingredients

  • For the Chicken Marinade
  • 600 g boneless chicken thighs cut into 1½-inch pieces
  • ¾ cup thick hung curd or Greek yoghurt
  • 3 tbsp gochujang Korean fermented chilli paste
  • 1 tbsp ginger-garlic paste
  • 1 tsp garam masala
  • 1 tsp Kashmiri red chilli powder
  • ½ tsp smoked paprika
  • 1 tbsp mustard oil or any neutral cooking oil
  • Juice of ½ lemon
  • 1 tsp salt or to taste
  • For the Gochujang Glaze
  • 3 tbsp gochujang
  • 2 tbsp honey
  • 1 tbsp dark soy sauce
  • 1 tsp fresh lime juice
  • 1 tbsp unsalted butter
  • For the Bowl
  • 2 cups cooked basmati rice or quinoa
  • 1 large cucumber thinly sliced
  • 1 medium carrot julienned
  • 1 cup cherry tomatoes halved
  • ½ cup quick-pickled red onions optional
  • Fresh coriander and mint leaves
  • ½ cup plain yoghurt or raita
  • 1 tbsp toasted sesame seeds
  • 1 tbsp crushed peanuts optional

  • Step 1: Marinate the Chicken
  • In a large mixing bowl, combine the hung curd, gochujang, ginger-garlic paste, garam masala, Kashmiri red chilli powder, smoked paprika, mustard oil, lemon juice, and salt. Stir until the marinade is smooth and evenly blended.
  • Add the chicken pieces and coat each one well, making sure the marinade reaches every side. Cover the bowl and refrigerate for at least 1–2 hours. If you have the time, marinating overnight gives the chicken a deeper flavour and a wonderfully tender texture.
  • Step 2: Cook the Chicken
  • Preheat your air fryer to 200°C (390°F).
  • Arrange the marinated chicken in a single layer, leaving a little space between the pieces so they cook evenly. Air fry for 15–18 minutes, turning the chicken halfway through, until lightly charred around the edges and cooked through.
  • If using an oven, place the chicken on a wire rack over a baking tray and grill at 220°C (425°F) for 18–20 minutes, turning once. For a stovetop version, cook the chicken in a hot cast-iron or heavy skillet for about 4–5 minutes per side, until nicely browned and fully cooked.
  • Step 3: Prepare the Gochujang Glaze
  • While the chicken is cooking, melt the butter in a small saucepan over low heat. Stir in the gochujang, honey, soy sauce, and lime juice.
  • Cook for about 1 minute, stirring continuously, until the sauce becomes smooth, glossy, and slightly thickened. Remove it from the heat as soon as it comes together.
  • Step 4: Coat the Chicken
  • Transfer the hot cooked chicken directly into the warm glaze.
  • Gently toss until every piece is evenly coated with the rich honey gochujang sauce. The glaze should lightly cover the chicken without becoming too thick.
  • Step 5: Assemble the Gochujang Chicken Tikka Bowl
  • Divide the warm rice or quinoa among four serving bowls.
  • Arrange the glazed chicken over the base, then add the cucumber ribbons, julienned carrots, cherry tomatoes, and pickled onions around the chicken. Finish with fresh coriander, mint leaves, a spoonful of raita or yoghurt, and a generous sprinkle of toasted sesame seeds and crushed peanuts.
