  • Ingredient Quantity Notes
  • Boneless chicken thighs or breasts cubed 500g Lean protein for this high-protein bowl; thighs stay juicier.
  • Curd plain, thick preferred 1/2 cup For the classic tikka marinade in this easy tikka recipe.
  • Honey 3 tbsp Key to the hot honey sauce in this viral chicken recipe.
  • Chilli flakes or hot sauce 1-2 tsp Adjust spice; brings the heat to this Indian fusion food.
  • Lime juice 2 tbsp For that tangy balance.
  • Garlic minced 2 cloves Adds depth to the marinade.
  • Ginger grated 1 tsp Essential Indian flavour.
  • Spices tikka masala, jeera, paprika, haldi 1 tsp each For authentic bold taste in Indian fusion food.
  • Mixed veggies capsicum, onions, cucumber, cherry tomatoes 2 cups chopped Fresh and colourful base.
  • Fresh dhaniya and pudina Handful chopped For garnish and freshness.
  • Olive oil 1 tbsp For cooking.
  • Salt and pepper To taste Basic seasoning.

Instructions

  • Step 1: Marinate the Chicken
  • In a large mixing bowl, combine thick curd, ginger-garlic paste, chicken tikka masala, roasted cumin powder, paprika, turmeric, 1 tablespoon of lime juice, salt and black pepper. Whisk until the marinade is smooth and well blended.
  • Add the chicken pieces and coat them evenly so every piece is covered with the marinade. Cover and refrigerate for at least 30 minutes. If time permits, marinate for up to 2 hours for deeper flavour and juicier chicken.
  • Tip: Longer marination allows the spices to penetrate the chicken, resulting in a more flavourful Hot Honey Chicken Tikka Bowl.
  • Step 2: Prepare the Hot Honey Glaze
  • In a small saucepan, combine honey, chilli flakes, the remaining lime juice and a pinch of salt. Heat gently over a low flame for 2–3 minutes, stirring occasionally until the honey becomes slightly thinner and the chilli flavour is infused.
  • Remove from the heat and allow the glaze to cool slightly.
  • Tip: Do not boil the honey, as excessive heat can reduce its natural flavour.
  • Step 3: Cook the Chicken
  • Heat olive oil in a grill pan over a medium-high flame. Arrange the marinated chicken pieces in a single layer and cook for 8–10 minutes on each side until lightly charred and cooked through.
  • Alternatively, bake the chicken in a preheated oven at 200°C for 15–20 minutes, turning halfway for even cooking.
  • The chicken is ready when it reaches an internal temperature of 75°C and the juices run clear.
  • Step 4: Assemble the Bowl
  • Divide the cooked rice among serving bowls. Arrange the fresh vegetables around the rice and place the grilled chicken tikka on top.
  • The colourful combination of rice, vegetables and smoky chicken gives the Hot Honey Chicken Tikka Bowl its vibrant appearance and balanced flavour.
  • Step 5: Finish with the Hot Honey Glaze
  • Drizzle the warm hot honey glaze generously over the grilled chicken. Garnish with freshly chopped coriander, mint leaves and your favourite toppings such as spring onions, sesame seeds or sliced avocado, if desired.
  • The sweet, spicy glaze adds the signature flavour that makes this Hot Honey Chicken Tikka Bowl unique.
  • Step 6: Serve and Enjoy
  • Serve immediately while the chicken is hot and juicy. Pair it with lemon wedges or a bowl of cooling yoghurt dip for a complete meal.
  • Every bite offers the perfect balance of smoky chicken tikka, sweet and spicy hot honey, fluffy rice and crisp vegetables, making this Hot Honey Chicken Tikka Bowl a satisfying meal for lunch, dinner or meal prep.

Tips and Variations

  • Madhu Savara’s Tips

    • Marinate the chicken for at least 30 minutes, but 2 hours will give you deeper flavour and more tender, juicy chicken.
    • Cook the chicken over high heat to achieve a light char while keeping the inside moist and succulent.
    • A cast-iron grill pan or heavy tawa gives the chicken a beautiful smoky finish, similar to restaurant-style tikka.
    • Warm the hot honey glaze gently over a low flame. Avoid boiling it, as excessive heat can affect its flavour and texture.
    • Drizzle the hot honey glaze just before serving to preserve its glossy finish and bold sweet-spicy flavour.
    • Fresh coriander, mint and a squeeze of lime juice add freshness and balance to every bite.

    Variations

    • Paneer or Tofu Bowl: Replace the chicken with paneer or firm tofu for a delicious vegetarian version.
    • Whole Grain Bowl: Swap white rice with brown rice, quinoa or millet for a more fibre-rich meal.
    • Extra Spicy Version: Increase the chilli flakes or add finely chopped fresh green chillies to the hot honey glaze.
    • Low-Carb Option: Serve with cauliflower rice or a fresh salad instead of steamed rice.
    • Fresh Fruit Twist: Add diced mango, pineapple or pomegranate for a refreshing contrast to the smoky chicken and spicy glaze.
    • Wrap or Salad: Use the grilled hot honey chicken tikka as a filling for wraps, rolls or a hearty salad instead of a rice bowl.
This keeps the authentic flavours intact while allowing you to customise the Hot Honey Chicken Tikka Bowl according to your taste and dietary preferences.
