Meetha Bhaat Recipe | Authentic Kangra Dham Sweet Rice Delight

Meetha Bhaat is a traditional Himachali sweet rice dish made with fragrant basmati rice, milk, saffron, desi ghee, cardamom, sugar, and dry fruits. This classic Kangra Dham sweet rice is known for its beautiful golden colour, delicate sweetness, and irresistible aroma.

Equipment

  • Heavy-bottomed kadai, Wooden spatula, Fine strainer, Small bowl, Measuring cups and spoons, Serving bowls

Ingredients

  • 1 cup aged basmati rice
  • 2 cups full-fat milk
  • 1 cup water
  • ½ cup sugar
  • 4 tablespoons desi ghee
  • ½ teaspoon saffron strands
  • 6 –8 green cardamoms
  • ¼ cup almonds
  • ¼ cup cashews
  • 3 tablespoons raisins
  • 2 tablespoons pistachios
  • Pinch of edible camphor optional
  • ½ teaspoon turmeric powder optional

Instructions

  • Step 1: Wash and Soak Rice
  • Wash the basmati rice until the water runs clear. Soak for 15 minutes and drain completely.
  • Step 2: Prepare Saffron Milk
  • Soak saffron strands in warm milk and keep aside.
  • Step 3: Infuse the Ghee
  • Heat 3 tablespoons desi ghee in a heavy-bottomed pan. Add crushed cardamoms and sauté until aromatic.
  • Step 4: Roast the Rice
  • Add soaked rice and sauté gently for 2–3 minutes. Every grain should become lightly coated with ghee.
  • Step 5: Cook the Rice
  • Pour in milk and water. Add turmeric if using. Cover and cook on low heat until rice is about 80% cooked.
  • Step 6: Add Sweetness
  • Add sugar and saffron milk. Mix gently and continue cooking until the liquid is absorbed.
  • Step 7: Prepare Dry Fruits
  • Heat remaining ghee and roast almonds, cashews, raisins, and pistachios until golden.
  • Step 8: Final Assembly
  • Pour roasted dry fruits over the rice. Add edible camphor if desired and mix gently.
  • Step 9: Rest Before Serving
  • Cover and allow the Meetha Bhaat to rest for 10 minutes before serving.

Notes

Always use aged basmati rice. Soak rice before cooking. Cook on low flame. Use pure desi ghee. Never over-stir the rice. Allow resting time before serving. Use premium saffron for authentic flavour.
