For authentic Sirmaur Patande, replace part of the sugar with melted jaggery for a deeper flavour. Serve this Patande recipe with apple stew or lightly stewed apples, a popular combination in the Nahan region. Let the batter rest for 15 minutes to make soft Himachali Patande. Cook on medium-low heat for even cooking and a light golden colour. Before serving, brush each traditional Himachali pancake with a little warm desi ghee for the best taste and aroma.
