Beduan Roti Recipe | Authentic Himachali Arbi Stuffed Flatbread

Beduan Roti is a traditional Himachali stuffed roti prepared with makki atta and a flavourful filling of mashed arbi. This Beduan Roti Recipe is a fine example of the simple, wholesome food enjoyed in the hill villages of Himachal Pradesh. Unlike wheat-based stuffed breads, this authentic Beduan Roti has a rustic texture and a distinctive flavour that comes from maize flour and everyday spices. Also known as an arbi-stuffed makki roti, it is a nourishing meal that is both filling and satisfying.

Equipment

Ingredients

  • For the Dough
  • 2 cups makki atta maize flour
  • ½ tsp salt or to taste
  • –2 cups warm water or as required to knead a soft dough
  • For the Arbi Stuffing
  • 300 g arbi colocasia/taro, boiled, peeled and mashed
  • 1 medium onion finely chopped (or 2 spring onions, finely chopped)
  • ¼ cup fresh methi leaves finely chopped, or 2 tbsp dried kasuri methi
  • 1 tsp red chilli powder
  • ½ tsp garam masala
  • 1 tsp coarsely crushed fennel seeds
  • 1 tsp amchur powder
  • Salt to taste
  • For Cooking
  • 4 –6 tbsp desi ghee or as required

Instructions

  • Step 1: Boil the Arbi
  • Wash the arbi thoroughly to remove any mud. Pressure cook with enough water for 2–3 whistles or until tender. Drain, allow it to cool completely, then peel and grate or mash it.
  • Step 2: Prepare the Stuffing
  • Transfer the grated arbi to a mixing bowl. Add the finely chopped onion, methi leaves, red chilli powder, garam masala, crushed fennel seeds, amchur powder and salt. Mix well until the spices are evenly combined. Divide the stuffing into 8 equal portions.
  • Step 3: Prepare the Dough
  • Combine the makki atta and salt in a large bowl. Gradually add warm water and knead into a soft, smooth dough. Cover with a damp cloth and let it rest for 5–7 minutes so that the flour absorbs the moisture.
  • Step 4: Shape the Beduan Roti
  • Divide the dough into 8 equal portions. Flatten one portion gently with your fingers to form a small disc. Place one portion of the arbi stuffing in the centre, bring the edges together and seal well. Dust lightly with makki atta and gently flatten with your palms or roll carefully into a thick roti. Handle the dough gently to prevent cracks.
  • Step 5: Cook the Beduan Roti
  • Heat a tawa over medium heat. Place the Beduan Roti on the hot tawa and cook until light brown spots appear. Turn it over, apply desi ghee on both sides and continue cooking until evenly golden with crisp edges.
  • Step 6: Serve
  • Serve the Himachali Beduan Roti hot with fresh curd, homemade white butter, green chilli pickle or any traditional Himachali chutney.

Notes

Madhu Savara’s Tips and Variations

  • Use freshly milled makki atta whenever possible for the best flavour and texture.
  • Knead the dough with warm water and prepare it just before making the rotis, as makki atta tends to dry out quickly.
  • Boil the arbi until just tender. Overcooked arbi may become watery and make the stuffing difficult to handle.
  • Crush the fennel seeds lightly before adding them to the stuffing to bring out their natural aroma.
  • If the dough develops small cracks while shaping the Beduan Roti, gently press them together with slightly wet fingers.
  • For a richer flavour, cook the Himachali Beduan Roti with homemade desi ghee.
  • Fresh methi leaves give the stuffing a better flavour, but dried kasuri methi can be used when fresh leaves are not available.
  • In some Himachali households, a little whole wheat flour is mixed with makki atta to make the dough easier to handle. However, the traditional Beduan Roti Recipe is prepared with makki atta.
  • Serve authentic Beduan Roti with homemade curd, white butter, green chilli pickle or thin buttermilk for a wholesome Himachali meal.
