Ingredients

  • Standard Ingredients
  • 500 g ripe yellow pumpkin
  • 2-3 tbsp mustard oil
  • 1 tsp fenugreek seeds
  • 1 tsp cumin seeds
  • 2-3 dry red chillies
  • ½ tsp asafoetida
  • 1 tsp coriander powder ½ tsp turmeric powder, 1 tsp red chilli powder
  • 1-1½ tbsp jaggery
  • 1 tbsp tamarind pulp
  • Salt to taste
  • Fresh coriander leaves

Instructions

  • Peel and cube the pumpkin.
  • Heat mustard oil, add fenugreek seeds, cumin, red chillies and hing.
  • Add pumpkin cubes and dry spices. Cook covered on low flame.
  • Add jaggery and tamarind. Cook till soft.
  • Garnish and serve hot.
