Kaddu ka Khatta Recipe | Authentic Mandiyali Dham Special Pumpkin Curry
Equipment
- Kadai, wooden spoon, knife, peeler.
- Small Tadka Pan
Ingredients
- Standard Ingredients
- 500 g ripe yellow pumpkin
- 2-3 tbsp mustard oil
- 1 tsp fenugreek seeds
- 1 tsp cumin seeds
- 2-3 dry red chillies
- ½ tsp asafoetida
- 1 tsp coriander powder ½ tsp turmeric powder, 1 tsp red chilli powder
- 1-1½ tbsp jaggery
- 1 tbsp tamarind pulp
- Salt to taste
- Fresh coriander leaves
Instructions
- Peel and cube the pumpkin.
- Heat mustard oil, add fenugreek seeds, cumin, red chillies and hing.
- Add pumpkin cubes and dry spices. Cook covered on low flame.
- Add jaggery and tamarind. Cook till soft.
- Garnish and serve hot.
