Step 1: Wash and Soak
Wash the rice and lentils separately until the water runs clear.
Combine them in a large bowl.
Add sufficient water and soak for 8 hours or overnight.
This soaking process softens the grains and prepares them for grinding.
Step 2: Grind the Batter
Drain the soaking water.
Transfer the soaked rice and lentils to a grinder.
Add very little water.
Grind into a slightly coarse batter.
Avoid making a smooth paste.
Traditional Gujarati Handvo always has a slightly grainy texture.
Step 3: Ferment the Batter
Transfer the batter into a large bowl.
Cover loosely.
Leave in a warm place for 8–12 hours.
During fermentation:
The batter becomes lighter.
Mild sourness develops.
Nutritional value improves.
Digestion becomes easier.
The fermented aroma is one of the defining characteristics of an authentic Gujarati Handvo Recipe.
Step 4: Prepare the Vegetable Mixture
Add:
Grated bottle gourd
Grated carrot
Ginger
Green chillies
Coriander leaves
Salt
Turmeric
Red chilli powder
Coriander powder
Sugar or jaggery
Mix thoroughly.
The batter should remain thick but spreadable.
Step 5: Prepare the Tempering
Heat oil in a heavy cast-iron skillet.
Add mustard seeds.
Allow them to crackle.
Add:
Sesame seeds
Curry leaves
Cook for 20–30 seconds.
The aroma released at this stage is unmistakably Gujarati.
Step 6: Add Fruit Salt
Immediately before cooking:
Add fruit salt.
Sprinkle a teaspoon of water over it.
Gently mix.
The batter will become airy and slightly frothy.
Do not overmix.
Step 7: Cook the Handvo
Spread the batter evenly over the prepared skillet.
Cover with a lid.
Cook on low heat.
Patience is the secret to a perfect Gujarati Handvo Recipe.
Slow cooking develops:
Crispy crust
Even cooking
Better flavour
Attractive colour
Cook for approximately 20–25 minutes.
Step 8: Flip Carefully
Once the bottom becomes deep golden brown, gently flip.
Cook the second side for another 10–15 minutes.
Both surfaces should be beautifully crisp.
Step 9: Rest Before Slicing
Remove from heat.
Allow it to rest for 5 minutes.
This helps the structure set properly.
Slice into wedges or squares.
